Salmon pasta : Wk20 / 3

Serves 4 : Very easy : Quick
240gm pasta twirls

400gm skinless salmon steaks
1 onion, sliced
1 red pepper, sliced

Freshly ground black pepper
Chopped fresh parsley

Cook the pasta in lightly salted boiling water.
Drain, reserving 2 – 3 Tblsp of the cooking liquid.
Keep warm.

Spray a pan with non-stick cooking spray.
Dry fry the onion. When it begins to soften,
Add the salmon steaks and cook 5 minutes per side.
The salmon will start to break up slightly.
Add the red pepper and cook while stirring gently.

Tip the salmon mixture into the pasta along with the reserved liquid.

Toss well to combine.

Serve with a fresh green salad.
Garnish with fresh chopped parsley and black pepper.
