Recipe : Week 6 : Day 5

Pizza Toasts
Serves 4 : Very easy
1 French loaf
2 – 3 large tomatoes, sliced
passata or tomato paste
16 green olives (pitted)
crushed garlic (optional)
1 yellow bell pepper
1 onion, sliced
160gm fat reduced mozzarella
Slice the olives.
Cut the bell pepper into thin strips.
Cut the French loaf into four, along the length.
Split each piece.
Toast both sides lightly.
Smear each toast with passata .
Spread with garlic, if using.
Now share all the toppings between the eight pieces, starting with tomato slices
Top with the grated cheese.
Grill until the cheese bubbles and turns brown.
Serve with a green salad and beetroot.
This is very quick and easy – just have everything ready before you toast the bread.
